  • tenderloin, I've also got this book, some of the recipes are a bit complex, but the soups are lovely, I'm more of a stew person, so like the chunky bits, but most of the soups in here require a certain amount of blending, which would be good for you..

  • Made Carrot and Lentil tonight. Lovely it was and dirt cheap.

    Sweated veg [carrots, onion, celery]
    Added chicken stock & 250g of lentils (in retrospect I should have just simmered the veg on their own for a bit).

    Seasoned with rosmary, thyme, garlic, salt & pepper, smoked parica and dried chillies.
    Cooked until carrot was tender and lentils were smooshy.

  • Last night I made chicken noodle and corn soup

    Poach some chicken thighs (keep water for soup) and set aside to cool. When cool shred.
    Chuck seseme oil, fresh ginger cut into sticks, and garlic into pan - fry. Loads and loads of spring onion. Add a couple of litres of water and some chicken stock cubes (would have been loads nicer with home made stock, but eh).
    Tin of creamed corn, chug of soy sauce, salt, pepper.
    More spring onions, a broken up pack of instant noodles and the shredded chook.

  • A favourite of mine is carrot, onion and tomato. Supported by a veg stock cube, water and black pepper to taste and a hand held blender to even out the texture . It’s lovely and sweet but some may like to add in a bit of milk to tone down the acidity. Any left-over veg can be chucked in too without affecting the taste much.

  • Last weekend I made a sort of soup/stew type thing.
    Shallots, garlic, turmeric, cinnamon, ginger, lentils, passatta (cook for a bit) tin of chickpeas (drained), potato, sweet potato, pint of vegetable stock. Left for time and made a little soda bread to go with it.
    Leftovers on Monday were good with added dried chilli flakes.

    Can use butternut instead of the potato/ sweet potato, but MrsDeth doesn't like them.
    Fresh chillis would probably improve it too.

  • This is delicious - White onion and cider

    100g Butter
    6 Large onions, sliced
    1 Bay leaf
    1 Sage leaf
    200ml cider
    800ml veg stock
    40ml Double cream
    Sal
    Pepper

    Melt the butter in a large saucepan and gently sweat the onions, bay and sage until the onions become translucent. Stir occasionally and keep lid on between stirs, add some cider or stock to prevent browning if needed (should take around 30 mins).

    Pour in cider and stock and cook for a further 20 mins, remove the herbs, season and gently blend.

  • Onion, chorizo, then loads of stock, couple of cans of white beans and a load of chopped black kale will do you a tasty peasant soup

  • Made this tonight. Doubled up on everything and used canned chopped tomatoes and white cabbage instead. Also made croutons from ciabatta and gruyere cheese (a la French Onion soup). Delicious!

    Replaced the ricewine with Bombay Sapphire, and the fishsauce with Lea and Perrins

  • Staple for us is a kilo bag of carrots rough chopped and roasted on high heat with S&P, fennel seeds and other spices depending on how I’m feeling, then soften some onions and one of the carrots, chuck it all together with some curry powder, fry for a bit and add about a litre of whatever stock you have. Blend til smooth, season to taste, consume. Very tasty and adaptable with other veg/seasonings

  • I don’t own a blender, if i make a ham hock/split pea soup does it matter? i’m fine with a stew not soup but shamefully i have never cooked a split pea.

  • I think it would be fine, I like rustic soups! As long as the split peas cook for long enough they will be soft

  • Do you have a pressure cooker? It will speed up cooking time

  • no, i'll do it on the induction hob and maybe finish off in the oven.
