Big Al at Wheelcraft out at Campsie Glen tends to be the one folk recommend the most.
He's a bit of a character and will chat away to anyone who will listen until the end of time... but he's a bit of a local legend and well regarded amongst all the roadies in central Scotland.
He's built pretty much all my wheels in the past and they are always faultless, he's even re-trued them free of charge a few times.
It's obviously not all that near to Dumbarton but if you've only recently moved up here then wheelcraft is worth checking out just for the Big Al experience.There's also some great mini-dh trails that my pals have built up in the glen behind the shop - worth checking out.

Great shout! I live in Lenzie and sometimes head up from Carbeth over the Kilpatrick hills. Miles upon miles of xc/gravel riding to be had.

Build most wheels quite happily. £30 labour. Can get most rims/hubs or supply your own, either way. 1 free true up down the line to deal with any settling.
Any recommendations for a wheel builder around Glasgow? The closer to Dumbarton the better.
