Your herringbone wall is all good, looks straight to me. And yes, probably white or clear silicone filler for the gap by the sink. I'm not sure, others will know better, or Google, but I don't know how rated for constant moisture/splashes normal caulk is.

Do we like this? I find that flavour of Pawson-Skandi all a bit meh. Obviously it's photographed as a blank canvas but it's just so lifeless.
Out with the limewash doug fir, in with colour, texture and some rich wood grain.
It's also very architect to use only one (dinesen) species of timber, I love mixing tones, people are a bit wary but it always works in the end.
This isn't a critique on your taste Chris, just a general observation / rantette.

Yeah fair, I can appreciate it but it’s not really for me.
That example is prob a step too far and gets close to wine mom pastels vibe but shows triple sliders in something other than black. -

Styling aside it’s the layout which annoys me - the kitchen dining is nice but by knocking right through its just a bowling alley - Maybe they’ll put a sofa in to divide it a bit. I don’t know. I think I’d always favour a den space for telly / family stuff at the front. Middle could be more adult sitting area for books / music etc.

No, as they'd have to pass planning and control that requires specific U values that regular conservatories do not meet (and why they are so dreadful in winter).

I'm sure it meets building regs for U value, not much in the way of sun shading though. Unless it's north facing they'll bake in summer.

As does everyone else with a flat roof extension / conversion...right? Unless they have other design interventions (ventilation of some kind, active cooling etc).
Could it have been designed to better cope with extreme heat? Maybe (I suspect it is north facing though). Can it cope with extreme temperatures better than a regular conservatory? Definitely.

Indeed, a bowling alley, and it'll be damn noisy and echo like made. A horrible place to actually live in.
Id add that all that white is a coward's colour palette as well. Unable/afraid to make any complex or clever colour decisions so just blank over in the name of style. Bit harsh but true..
Not straight walls. Caulke this sink?
Induction hob also looks slightly ajar but going to compromise on least worst looking angle
