Seem to remember Bike Island in Pollenca was happy to flip the brakes on a Giant Defy to UK format even for a short rental - I'm much happier descending from the mountains with right hand front brake muscle menory - a lot of the rentals there are euro setup. If you want to try some exotics there are some places on the strip in Alcudia - BMC and Specialized etc. Most bling bike hire spot that I found was in Soller - Colnagos and Emondas - very nice but pricey
