I used to love the little Belgian place just off Dam Square called Café Belgique on Gravenstaat. Also a terrific little brown café/bar is Café Mulder on Weteringshans.
Others I've been recommended include In De Wildeman and Proeflokaal Arendsnest and Café Spuyt.
