Nearly all. I don't cook much. I've got a Rockstead Tei, a couple of bayonets, a folding RAF machete, a RAF firefighter's axe, a Spanish army survival machete and a de-Nazified Hitler Youth knife.
I think some of the buyers of Japanese kitchen knives are like my brother, i.e. don't want to spend time in the kitchen, but want to buy a really well made knife, preferably without violent connotations. Knives are fascinating.May as well admit it. Doesn't necessarily mean we want to stab anyone.
