I travel to Sweden once a month. At the moment Giffgaff gives me 20gb p/m data to use whilst in the eu which normally suffices. As of next month that's going down to 5gb which isn't really going to cut it. I have a pixel 4a which can apparently dual SIM with an esim. In Sweden you can only get esim on contract which would be silly for my needs. Any ideas for something I could use to have decent data GBs in the eu?

O2. They have some free bolt-on thing which allows EU (and other places) roaming for free.

They sometimes have fair use terms, only 3 months free eu data unless you show a uk utility bill.
