Looks like lots of channelling there. Watery and bitterness would back that up as it's not extracting evenly. Check the shower screen is flowing evenly. It could well be blocked up with coffee residue and limescale causing it to spray, so it might be worth taking it off, giving it a good scrub, descale and soak in Fizer to remove the built-up coffee residue. Hold it up to the light and check all the holes are nice and clear. Do the same with the basket. Again, if it's blocked it'll force the water through a not ideal route for even extraction.
And of course, randomly, it could just be the weather.
