Probably could do with longer on the plant, but too late now. It's always a fine balance between leaving them on long enough to ripen whilst running the risk of the woodlice and ants tucking in first.
You eat all of it, bar the woody bit where it was attached to the tree.

Don't know if figs continue to ripen when picked. This Summer's prolonged warm weather results in the below in outer north west London.
