So Van Vleuten is ruining it for everyone by being too good. Her excuse is "I’m 39 years old so for me it’s possible to train for so many hours...Every year you can do 5-10% more hours." Is that true?

She has a reputation for being able to train harder than her teammates, and as @Sumo highlighted, regularly trains with men's side of the team.
Women's racing tends to avoid the longer, harder climbs as the disparities between full time, well funded pros like Van Vleuten, and part-time, barely paid a living wage 'pros' in some of the smaller teams is stark.

I've also read some articles (not just cycling) that suggesting that women reach endurance peak later.
I mean Van Vleuten has previously won the Giro Donne by approx. 4 minutes from her nearest competitors twice so not unheard of. Also can't see anyone in the women's peloton beating her up the Super Planche today.

Ok I was being facetious before but let's make it simple. She was talking in the 2nd person. If you say something like "I've been training for a lot of years and every year you get a bit better", the "you" is referring to yourself. In her statement there may have been implications that the same process can work for other people but I'm pretty sure she wasn't saying "every pro cyclist male and female can do 5-10% more hours training hours every year" because that's a very broad statement.

Pretty sure she was referring to the others in the TdFF. And Demi Vollering thought so too. Or hoped so. Obvs 10% is double 5%, so I would think she used that big margin to include other riders, not just her. She wouldn't use that margin to describe just herself, because she probably knows a very precise number for her own annual increase.
Isn't there any general info about this kind of thing? Any training experts here who could chip in?

Looking at strava AVV has ridden just a touch under 20,000km vs Vollering at 14,000 which is a pretty big difference. Although I'm unsure if Vollering rode the Giro Donne.
