Anyone have a suggestion as to where I might find a discontinued Chris King headset?

They used to import Chris King (Evolution Imports), so might have some old bits knocking around.

Chris kings have been out of stock everywhere for at least 6 months. If anyone had some, I imagine they'd have had no problem selling them by now.

I assume that guard’s purpose is to help stop the tire from flinging mud/dirt/grit down onto the chainset/chain? In conditions like they encountered during that ride, I can’t imagine that it made much difference at all. Especially with the front tir simultaneously flinging the same mud/dirt/grit back at the moving bits.
