Really the hubs need rebuilding onto wider rims
This wont solve anything, if anything even a tiny bit out of true wheel will make the pads rub. When I had mini Vs I went from open pro to archetype to HED, nothing solved the mini V issues. Eventually went canti which didnt have any of those issues but at the end of the day they were .. cantis.

Just style, saw it on some bikes when I was putting the bars together a year or so ago, knowing the “source material” I’m sure their only purpose was “shifting more product per bike”

@amey think the only true way around this is to just ignore it, and get the rims built with box sections next time so I don’t care about Finnish being rubbed off when setting up the pads 🧠
@Yemble lightest wide tumble less one is velocity quill at 21 mm but £99 a rim!! Velo orange has a tubeless one that is a tad wider but weigh as much as the bike you’ll put them on and have no machined track, kinlin adhns is 520~g a rim, 20mm internal and £25 a rim, but not tubeless! Then there is the pancetti brevet??? 80-90£? Rim tubeless, lightish, crust has one which is similar but lol @ that - big tyre rim brake really on its death bed tbqh - especially with the desire for 29 50mm+

Ooh yeah, those Crust 23i rims are probably the best bet. I don't think they were out when I built this set on Pacenti Brevets. Can't justify that spend, but if I were doing it again I'd probably go those in 650b to leave a bit of room for fenders. Hoping to move somewhere that gets actual rain later this year.

i have a friction shifter for the front mech, the frame (cross check) is bottom pull i believe?
what front mech do i have to get to make this all work, will any deore style one do the job?

Make sure to a get a Top Swing/Conventional Swing, but the mech you've linked looks like it should do the job nicely.
MTB doubles are vnice imo as you don't have to spend silly money on cassettes
I feel all this. My 50c tires measure 45mm. Not sure a 25 or 30mm internal, polished, rim brake rim exists though, and I couldn't afford it if it did.
