don't support copying sub-elements of a chart, only the whole chart.
Once in Illustrator you can use the Group Selection Tool to pick it apart by sub-bits (click multiple times).

For one blissful release it included a complex chart editor! Disappeared in an update and never seen again, thanks CC. I don't think the chart tool as-is has been updated since 1988. There's this which I keep wanting to give a go, but I'm yet to get around to it.
If you do a lot of % pie charts, the opentype font Chartwell is good for quick + dirty efforts.
