A few years ago rode from south london and crossed at dover (116km) and rode to Ypres (66km), staying the night and riding to Brussels the next day via Koppenberg and Patterberg (135km). Achievable in a day if you get the right ferry crossing.
Yep, join the canals and you'll get there in a day, just be prepared for a very flat ride where the biggest climb you do is a bridge over a main road.
