I think he's only meant to run max 30mm spacers below the stem on that fork.

No worries. I am facing the same dilemma, have the fork sitting here and yet to fit it, but I am only 2.5 mm over with my current set up on the Wolverine. I think loosing that little of a spacer probably doesn't result in a noticeable geo change.
