Any rotors will be fine.
I'm guessing the wheels you are wanting to use will have a lockring to hold the rotor on but if not, you will need to buy some.
I have used these on my own wheels and several customers ones at work

They say for 15 and 20mm thru axle but they're also a safe bet for 12mm axles.
Sometimes the end caps on 12mm wheels can make it impossible to get the tool in to tighten the other type of lockring. Like these
Rotors are the same but lockrings sometimes aren't cross compatible
The ones with the internal spline that use a cassette tool fit on QR wheels and some 12mm ones.
The ones with the external spline that use a hollow tech BB tool fit on pretty much all wheels
