  • As of this week the aim in our household is to only have plant based food during the week. Having watched a few documentaries and it’s the health benefits I am mainly seeking and to reduce our environmental impact. We have been mainly vegetarian for about 4 years now (meat once a week) and generally 3 of our main meals each week have been plant based.

    The biggest changes will be finding
    a milk alternative for tea and coffee
    Something instead of bread and cheese for lunch - only so many hummus or avocado lunches I can do
    Our two default urgent cupboard meals are pasta with tuna, sweetcorn mayo or pasta with frozen fresh pesto.

    It’s just a matter of finding quick substitutions for those convenience meals.

    Will try to make a red pesto with nuts, sunblush tomatoes, olive oil and nutritional yeast (all store cupboard items)

    Will make hummus type things with a variety of different pulses/spices

    Also aiming to make more pickles and fermented foods this year. First up will be wild garlic

    So now the search is on for quick tasty (15-20 minute) easy tasty plant based meals

  • fresh pesto

    Super easy to veganise fresh pesto. Just do loads of basil, olive oil and toasted pine nuts all blitzed up. That's how we do it at home, them those who eat cheese can sprinkle on top.
