Does anyone know if Cannondale Spiderings are compatible with 12-speed chains, and if so, whether compatible specifically with SRAM AXS flat top chains?

No but probably yes.
I'm using a Sram flat top chain on Shimano 11 speed cranks and groupset and works perfectly

Out of interest, why are you doing this? Just didn’t fancy buying the SRAM crankset?

I'm not using any Sram. It's on Ultegra Di2 11 speed with DA9000 cranks.
The Sram chain was cheaper 🤷🏼‍♂️

You can put normal forks on those frames - it requires a special headset which (at least it used to be) is available. Your trick will be to find forks for a 26" wheel.

But why bother? All those 26" frames are so far beyond their service life it's not even funny.
