I guess this has been discussed at length but I'm confused about GRX/road groupset compatibility. I get that GRX is road pull, but how are the wide range MTB cassettes compatible with the GRX RDs, aren't they a different sprocket spacing?

They're either the same or close enough spacing that MTB cassettes work with road shifters.
It's the freehub body length that's different between road and MTB but solved with a spacer -

Yes. The HG800 Ultegra 11-34 cassette is really a MTB cassette, which is why it fits on 9/10 speed freehubs.
