If you don’t mind running the back wheel as far back as you can in the dropouts you can get a 30c in there. You’ll need to change the front brake as well, I went apex (99p off eBay) as the stock ones are tres narrow.
I’ve used wide flats, track drops and midge bars and by far the best for bashing around on dirt have been the Midges. To run swept back bars I think you’d need too long a stem to not hit your knees that the handling would be more than a little strange.
As for guards? I think a flinger or maybe a set of those mtb ass saver type things could be made to work?

Maybe I should ask on "any questions", but, with the intent of "functionalizing" it, what are the largest tires you can fit on a Langster? 28c?
A friend wants to cycle to work again, his commute would involve path along the Thames, etc. I guess with anything bigger than 23c mudguards are excluded?
Swept back bars suggestions for this also? Currently he has bull horns cut from the original drops, reversed (was done nearly 15 years ago, bike has hardly been used since)
