(Disclaimer: Ive got TRP spyres on my gravel biek, just because I already had cable shifters. Perfectly happy with their performance. I was even slightly disappointed riding my friend's bike with force hydros. Also your reasoning makes complete sense.)
It's because what if on that tour across the desert you'll never do your hydro fails and you can't fix it? It's worth having worse braking that needs adjusting as the pads wear so that if a cable snaps, but not the outer or a lever or caliper breaks, you can replace it with ease.
