  • Do santokus tend to be scalloped on both sides or just one?

  • Depends on the manufacturer.

    Scalloping is supposed to stop food sticking to the blade but in my experience it doesn’t.

  • As hollowlegs said, some are and some aren't. Not sure what the the proper definition of a santokus knife is as the blade can be single bevelled or double bevelled suspect just the shape of the blade.
