Not really, when a fork is designed for a specific rotor sizes, you'd want to run it at the max rotors sizes as it would put too much stress on the fork.
Not many bike out there have flat mount 180/160mm rotors option such as the Mason ISO where they set the mount 20mm higher than standard and use the 140/160 adaptor to choose between 160/180mm.
Specialized have this on their Diverge, but that likely down to poor quality fork than actually designed to run 180mm.
You're limited to the size of rotor you can run for a start
