So the failed workouts were Osceola and Grassy Ridge -3? They both seem fairly reasonable in what they ask, but personally with those kind of workouts I'd just go for the max of whatever I could achieve on the day rather than worrying if I hit 120 or 125%, as long as it was above 105% or so. Of course if you are unwell that's a different thing.
I must say those Maintenance plans are very intense, I'm not sure I'd be motivated for that sort of thing at this time of year!
Preceding the ramp test I was on Enthusiast mid volume maintenance pt1
It is the plan that best suits my available time in terms of 4 workouts per week and duration.
