Is it going to be unreasonably expensive to get a super long steerer and a custom ~18inch spacer made?
I think I could benefit from going higher than the ez-up goes.

Depends if you need adjustability or not, if you know exactly what height and extension you need get it made- haiku bikes, the vandal metalworks to name a couple of forum framebuilders who might be able to help you out!

Or get a more standard looking stem and some wild bars made
