I've had workshop sessions like this. So frustrating. Seems to be a universal truth that nothing is where it should be and nothing works right when you're low on time.
Would a different size rotor help with the caliper clash? It'd be a different adaptor and hence a different caliper position.

Thanks, yes, I was wondering the same myself as I was falling asleep
It might be necessary as I'm not even sure that the caliper and mount will even clear the seatstay once the caliper is aligned with the disk
