Little compatibility help:

I've ordered this: https://bike.shimano.com/en-EU/product/component/shimano/CN-HG601-11.html

I've received this: https://bike.shimano.com/en-EU/product/component/mtb-ebike-e8000/CN-E8000-11.html

I'd say I can stick to what I received, am I wrong?

I’m not sure why, but the manual says that the e8000 chain can only be used with a single front chainring. So if you’re running 2x with a front derailleur there might be some issue with shifting.

I don’t really see how the chains are different other than the ebike chain has a supposedly more resilient coating.
