Only freeze dried or also normal dried? If you’re into making your own food and have space for another kitchen gadget, home dehydrators are pretty good for food you intend to eat dry.
A kg of sliced mushrooms dehydrates into a bag the size of an inner tube, with (mostly) all the calories and nutrients intact. Bananas and apples become chewy sweets. etc etc.

Idahoan Mash is the best we've tried, Decathlon do some ok meals but not much veggie options. We ended up getting a dehydrator to do our own meals, given the cost of the ready made ones. (lentils and beans dehydrate beautifully)

IMO you'd need to try them. -

Do you find mushrooms make room stink? Had read reports that happened, so didn't fancy giving it a go.

They do tend to smell like food is cooking, yes, but I wouldn’t call the smell unpleasant, and it goes away like any cooking smell.
(Went to check price of mushrooms at sainsburys et al websites, prices have already gone up :/ ) £1.50 will get you 500g of whole mushrooms, and all that’s needed is to wipe them down, slice (3-5mm works well), and dehydrate at 55C until desired consistency is achieved. I’ve found the sweet spot to be when they’re no longer leathery and instead slightly crunchy, but not so crunchy they become dusty.
The taste is accentuated deliciously, even if the final volume looks meagre.

Maybe search for 'backpacking food'? A few brands I have had good luck with (though I am in the U.S.) are Peak Refuel, Mountain House Adventure Meals, but for sure the best has been Backpackers Pantry. Really tasty.

I'll probably leave it until I'm properly in own place! On an aside, Jamie Olivers (Fiddes Payne) Black Daal dehydrates/rehydrates fantastically.

Again, no affiliation - but I did my research and they came up the best. Had my kit for three years now and not a single complaint from me.
I use the super light system (I’m six one and eighty five kilos and nothing feels flimsy).
