You may be looking for a 'watch cap'. There is a whole subsection of the middle-aged male artisanal clothing market dedicated to replicating WW2 cold weather military designs. They make my head itch, though.

I hate wool toques that are overly thick yet knitted so loosely that any warmth they retain is lost to the wind. I had an old Kangol that I snagged from the lost and found at work that lasted me about 15 years that was tightly knit, thin and 100% wool. That combination is almost non existent now.
