Not in a salad no, but pigs ear is quite popular in places I regularly visit. Can't say I'm a fan.

Portugal I believe, will get a picture next time I'm in that supermarket.
Am a fan of stuffed pigs trotters tho.
EDIT: To be clear, it is called a pig's ear salad but not a green leaf type of salad. It is cooked not sure if you eat it cold or re heat it.

Went to Xian impressions opposite Arsenal the other day and oredered the cold sliced ones. delicious when eaten with their spicy noodles. a revelation i might say.
