I think one of the GRX mechs can work with an 11-46 cassette when used 1x. Not sure which one of them exactly. That can already give you a very big range.
If you want more or need to use a mtb derailleur with road STIs you might have to go either for electronic shifting or adapter solutions like a wolftooth tanpan, a ratio kit (sram only) or a shiftmate (8?).
You can obviously achieve a similar gear range with 2x with fewer special components. On my 650b "rando" bike I use a sub-compact chainset 46-30 with an 11-34 cassette. 2x9. Very simple but a wide range to be fast on the road or able to an off-road climb with luggage. I think GRX 2x offers a very similar range.

I do like normal road style brake lever/shifters rather than bar end shifters, but not sure if they'd work with a mtb rear mech..
Think the bike shop may also struggle to get a GRX groupset
