Oh, exciting! I wanted a Peregrine for a long time and I love both of Toms builds up there. I ended up altering an old Raleigh frame but going for a similar vibe.
Regarding cranks, I assume you want to go for a classic look. Top of my list would be White Industries Eno. They pop up on eBay sometimes and look great 1x.
Tom used a Velo Orange Grand Cru SS crank which comes in black and silver with a 110bcd. So loads of chainring choices. I think on the Peregrine MK2 he is using a Rene Herse crank but the Velo Orange Grand Cru 50.4 or SunXCD 50.4 are very similar and they can all be run 1x, 2x 3x. Also popular with this kind of build are Middleburn cranks. They have a replaceable spider to accommodate most chainring sizes and combinations and even the newest model has a very classy look.
