Buy a cheap kitchen knife or use an old one. Blunt the edge and practice sharpening it. Use a couple of you tube videos for guidance but practice is easily the best way. I’ve never been on a sharpening course so I can’t comment but I can get a knife as sharp as I want.
It’s very satisfying but it does take a while to learn.
If I buy sharpening stones like the ones used by JurekB, how far will I get with instruction from youtube or whatever, instead of going on a course? I worry that if don't get the right angle and stick to it wihout any deviation, I will just waste the blade by wearing it away. And perhaps make things worse by putting on a new, inferior edge at the wrong angle. I won't know how to recognise what sort of grind the blade has, and then do everything wrong.
