The one I currently have has a metal plate that is screwed into the wall, and the wooden part has a recess behind it, magnetically attaches to the metal plate.

It's a liner lock so i don't think is legal to carry around ( i'm not sure about the legislation here in spain but it will not leave my studio desk anyway). the scale look deep and change a lot if you move it around but to be honest even if the ergonomics is good i don't particularly like the feel ( probably the wood option would have been better). I bought it because i think it look super cool so i'm happy and i'm sure it can open all my package fine.

I have something similar and used 3 velcro command strips to fix to tiles. Been up for over a year n hasn't budged. 6 or 7 knives inc. a clever. Solid

I recently bought a used Fallkniven F1, which came with a naff plastic sheath so I knocked up a better one for it.
It’s a terrific woodworking knife, very happy with it.

I have anew opinel and it’s impossible to open without pliers pulling the blade out.
Has anyone else had this problem? What’s the solution.

Leave it on the radiator to dry it out. See if that improves it.

Oil the hinge. Few drops of olive oil are fine.
Find that the carbon steel blades do that, but not the stainless.

If I buy sharpening stones like the ones used by JurekB, how far will I get with instruction from youtube or whatever, instead of going on a course? I worry that if don't get the right angle and stick to it wihout any deviation, I will just waste the blade by wearing it away. And perhaps make things worse by putting on a new, inferior edge at the wrong angle. I won't know how to recognise what sort of grind the blade has, and then do everything wrong.

Buy a cheap kitchen knife or use an old one. Blunt the edge and practice sharpening it. Use a couple of you tube videos for guidance but practice is easily the best way. I’ve never been on a sharpening course so I can’t comment but I can get a knife as sharp as I want.
It’s very satisfying but it does take a while to learn. -

I wouldn’t recommend applying oil to an opinel pivot. I suspect it will make the wood swell. Wipe the blade with oil but not the pivot.

Tinder account for your mum. No one needs the noise of an electric carving knife they are a solution to a problem that doesn’t exist. A decent bread knife doesn’t have to be expensive nor is a decent carving knife.
Electric knives rip things apart.

French cleat? I wouldn’t trust a traditional one cut from wood but the metal version might work.
