Lego have a Creator 3in1 theme, currently with 28 sets, where each set has instructions for 3 things.

They don't have the detail of the bigger and more expensive models that Lego are mostly targeting at adults but they are great sets.

All Lego recently has been a one off, that's how they sell them.
The last time I saw multiple build instructions was the first lego Technic car.
