I wouldn’t be too sure, frankly. Not trying to add to people’s fear, but a kitchen knife or box opener will intimidate most people into giving up their bike, I expect, so why take a machete? It’s more difficult to conceal, transport (under your shirt while riding behind your buddy on a scooter) and get rid of, although it might intimidate victims more and cause them to focus on the weapon instead of on the mugger’s identifying features.

Maybe it was the first thing they had lying around, maybe they wanted a big blade, or maybe this asshole was ready and willing to use a machete if the cyclist wouldn’t let go of the bike. In the end it doesn’t even really matter: best to just get insurance and not worry about confronting some jerkoff who wants my bike and is willing to try to maim me for it.
