Not really.
Jewellers well protected.
CCTV / alarms / safe / panic button etc.
Vehicles generally have anti theft devices / trackers etc.
A 5 / 10 K crabon biek can be serial scrubbed and made untraceable in an ebay auction near you.
They hit a guy with a brand new crabon dale. They know what they are doing. Selective.
Bike theft is as old as the hills. The price inflation has just made them moving targets.
Easy money.

Take a Rolex off someone's arm outside a posh nightclub. Still worth more than some moody road bike and doing it in broad daylight with a machete? Like I said, if you're gonna go to the extreme these guys have, do something worth some real money. Rob a drug dealer or ram raid a booze store or something ffs. Waving a machete around only to then wait for an ebay auction for your "rode biek" to finish is ridic.
It seems pretty dumb. If you're going to go to the trouble of getting tooled up to rob people, why not get a fucking jewellery store or a betting shop or a posh bar or something decent. No one wants some crashed arsed old bike
