The one I have is 1000 on one side and 3000 on the other. That gets my knives more than sharp enough and it's definitely my technique and lack of experience that prevents them getting any sharper, rather than the stone.

My dad showed me how to get a knife shave sharp using a coarse old stone and good technique. It’s a skill that’s worth learning, and better than expensive stones. Having said that I use a hard black skerper stone which is quite pricy but leaves a beautiful edge.

I've just ordered a cheap knockoff stone to give it a go.
My gf has this knife I'm sure she's used to hack bricks into shapes that'll be fun to get back into usableness. I tried one of these fancy kitchen sharpener and was rather impressed at how much knife edge it removed. Sadly it has a wave like edge now.

Japanese knife has been packed away for a while and has got some rust spots. Best way of fixing? Also I forgot I dropped it and it’s lost a bit of its edge.

You could do it but IME it takes a while and is hit and miss if you don’t have experience re-profiling knives (which you only get by doing it). If it’s a knife you value I’d take it to a pro.

If you’ve got the stones I’d give it a go yourself. The dinged knife will need reprofiling with a coarse stone first.

Was actually popping into this thread to ask if anybody here, preferably SE, would be happy to help me get a (cheap) blue paper steel Japanese folding knife as sharp as it can get.
Have tried with my whetstones and a 20 degree blade guide and have somehow made it blunter. I am shit at sharpening knives.
Its a gift for somebody and wanted it to be as close to razor when I give it to them. Would pay cash money, beer, charity donation, forum donation or whatever the sharpenenger stipulated.
