you could use two small front panniers instead of one big rear one. Advantage that if you wanted to do "full" touring you can put the two on the front, two large ones on the back.

I have a Brooks branded Ortlieb rear pannier I use for light touring, but realise having everything on one side of the bike isn't healthy for the bike for long distance rides.
Thing is, I like to pack light. Most panniers seem to be fairly chunky - are there any 'slim' pannier bags anyone would recommend for light touring?
