You are limited by whatever you can buy right now. Ribble steel CGR showing as April 2022 but has everything you describe there - assuming you'll not want bigger than 700x45x/650x47c tyres.

Agree, but still wanted to hear first hand experiences, there may be similar requirements from fellow forum members.
One option I had on mind is an extra set of mostly road dedicated wheels and tyres (27+mm) which I could simply swap with if going tarmac only.

Yes that’s also a fact at the moment, shops are pretty empty.
Anyone riding Boardman ADV 9.0, seems to have good reviews, which I always take with a pinch of salt hence me asking questions here

If comfort is your priority, I'd say it's fairly useless anyone here recommending this or that bike. Fit to you is going to be the key thing. Larger volume tyres (compared to your road bike at least) should be a boon, and something with fairly compact geometry for a bit more seatpost flex might be good? Double-wrapped bartape or gel pads under the tape might help.
Another option might be a set of lightweight wheels and more gravelly tyres for your hardtail, maybe with a rigid fork?
