I do wonder how many people have had both hydro brakes fail at once on a tour. The worst I've done is taken worn pads to Wales and had to bail on a ride because they were eating the discs by the half way mark and I'd not packed spare pads. Nothing to do with hydro though.

There's less to go wrong with hydros, they work better, don't need adjusting, but it might be a bit harder to fix if something does go wrong, but they'll probably be fine.

Nothing wrong with flat pedals and bags, but I can’t comment on cable vs. hydro because for me, my upgrade on my bikes is going from canti’s to v-brakes.

Your heal may interfere with it on the up stroke depending on where it sits. That's all I can think off.
