Christoph Sauser is a legend. I went MTB riding with him a couple of years ago and he was saying he generally uses a Spesh Roubaix for his Swiss gravel stuff as that's all he needs. He has MTB bikes for actual trails and "doesn't have a beard or tattoos" . Big Grav have obviously got to him now!
He does roast (very good) coffee though so taking the piss out of hipsters was probably a bit rich...
