What's the greatest disparity in tooth count I can run on either side of a flip flop hub with the same length chain? Is there a way to work it out or is it trial and error? I'm sure this has been discussed before...
There's a rigorous way, and there's a rule of thumb. The difference is tiny, so just use the latter - for each tooth change in sprocket or chainring, the axle moves ⅛". How many you can get away with depends on how far you can move the axle in the dropouts/track ends.
