I stayed to the south of the sella last year, near predazzo. Almost impossible to find a bad route in that area, the scenery is so perfect it doesnt look real.
Of the more obscure routes, I enjoyed this climb and the descent, which passed a pretty lake: https://www.strava.com/segments/4604217
Wasn't as hardcore as the other climbs in the area.

those routes are basically the maratona roads. you will have great time -

These are killing me as my (booked before Covid) trip to the dolomites was cancelled - supposed to be 8 of us and felt too risky re. quarantine / staying together... Looks great, enjoy!

I'd be tempted to bag Falzarego and descend from there doing that route. If you're staying in La Villa you're not going to return thinking it would've been nice to do Campolongo a few more times...

How busy are the roads at this time of year?

They were pretty quiet last year at the start of September. A few caravans of wankers in super cars, but pretty chill otherwise. I think the local authorities take their chance after August holiday time to fix the roads so there were some temp traffic lights.
It was amazing. Highly recommended. Take your pie dish rear sprocket.
Also, Italy is on holiday in August. Not sure if that means it’ll be busy or closed.

Only one place at only slightly extortionate pricing available (in the Eisach valley, which seems not ideal for cycling) gave me the idea the roads might be as busy as the hotels this month? Serves them right, 14c start next week 😂.

Yes it will be busy. But the dolomites are what they are, popular but amazing.
Personnally from where you are ludwig, i'd go somewhere within reach from innsbruck, ötztal for instance -
