The user+extension@domain.tld trick works on most email servers, but since everybody knows this it does also tell people your real email address, which is presumably what you're trying to avoid. It's handy for filtering, but that's about it.
Aggi has the right idea, the modest cost of owning your own domain is money well spent, but it's much less anonymous than other solutions, so you still need to use one of the generic domains to provide cover for secret stuff.

You're right I was after something totally separate.
I do actually have my own domain and it with use fastmail.
But I only really use it for specific personal work type stuff as I don't want it to turn into the mess my first Hotmail email is.
I think I need to sit down and rethink an email strategy and implement it.
