Horse archery is excellent to watch, I'd watch that at the Olympics. Points for how fast the horse is going, as well as how close to the bullseye you get.

Swim archery might work. Harpooning?

Yabusame (horseback archery) is actually a Japanese sport / activity?

I didn't watch the opening, but I'd have thought they might've included some.

The opening ceremony was surprisingly spartan, although maybe I'm comparing unfairly with the insanity of the London 2012 opening ceremony.

No horse archery, they did include kabuki and carpentry though, which was nice to see.
