This is the kitchen knife I end up using most of the time, a japanese Tojiro Nakiri carbon steel.
While designed for veggie prep, it´s very versatile for most cutting tasks once you get comfortable with the form factor.
Super easy to sharpen, and stays sharp. The steel is very reactive as seen on the picture.
