Home grown courgettes are nicer, we had loads last year. Not really a recipe but they make a good sandwich filler, cut them on the diagonal, rub a tiny bit of oil on a griddle pan and cook both sides until you've got some nice charred lines with a grind of salt and pepper. Goes well with houmous or a tahini sauce and some spinach or whatever, or cook them like that and use as part of a salad.
