Aye, the punishment was lesser than the potential alternative, a goal. But where it was on the pitch meant he wasn't denying a clear goal-scoring opportunity. As mentioned upthread, had it been one-on-one with the keeper, he'd have been off.

He could have pulled his shirt without strangling him though. I didn't expect a red, and I like Chiellini ordinarily, but that was pretty gross to watch. It was just nasty.

I think this is where the ‘I can’t believe it wasn’t a red’ comes from. In several contact sports, to whip someone to the ground from behind is a very serious infraction due to the potential for head injury.
In real time I was incensed as it felt a lot like that was what had been done. On replay I don’t think I can interpret that as what actually happened. He definitely pulls Saka back, and in turn he falls backwards, but he doesn’t forcefully pull him downwards, imo.

I'll give Chiellini the benefit of the doubt here, I don't think he set out to strangle the lad but just grabbed whatever he could and pulled back. Split second longer and Saka is gone.

It could be classed as endangering the safety of an opponent (and possibly using excessive force) which is serious foul play.
A bit unusual as a foul that would get you sent off in rugby but not in football.

I've clearly misunderstood UEFA's commitment to Fair Play. A determined team like Italy can accrue 5 Yellow cards for cynical foul play, relying upon the reluctance of the referee to 'spoil the spectacle' by sending someone off with a straight Red.
Every team can suffer a couple of Yellows from misjudged tackles. There needs to be a team element. 3rd Yellow needs a sanction. 10/15 minutes off the pitch for the offender?

That Grealish sure is a sneaky bugger, realising he hadn’t hurt Jorghino’s studs with his knee he followed through to see if his thigh would do better and when it didn’t he used his groin to arrest Jorghino’s movement completely - Jorghino’s subsequent collapse clearly showed his studs had been really hurt and Grealish should have had a straight red, travesty he didn’t.

Absolute gaslighting, Jorghino knew exactly what he was doing, went in studs up on a player on the floor then the collapse to try to intimate it was 6 of one and half a dozen of the other. 100% shithousery and thankfully the cynic didn’t get to score the winning penalty as I immediately feared, that would have been too much to take.
I live in a naive world where a 5 gear Capri is the stuff of a madman’s dreams but I’d love it (LOVE IT) if Tuchel decided to bench Jorghino for 3 games at the start of the new season (he could explain it how he likes, we’d know the real reason). Another decent outcome would be Super Jack sitting him on his arse without touching the ball, bite his thumb at him and pirouette away.

Intent is unimportant in the rules. Jorginho has both feet off the ground (albeit briefly) and leads with his studs. Win the ball or not, by the letter of the law it’s a red card. No difference between that and Danielson for Sweden against the Ukraine.
It also introduces a psychological element.
Get shirt pulled, ride it and carry on.
Get shirt pulled again, this time harder since the previous attempt didn't work, ride it out and play on.
Get shirt pulled again, go down like there's a sniper in the crowd. Penalty.
As mentioned above, the skill is knowing how much you can get away with, how often and in what context in the game.
