How does the rear mech work with Hope jockey wheels compared to the original bigger wheel?

Works perfectly. Just with less friction.
The standard grx jockey wheels are the same size. AFAIK it's only the 12 speed mtb shimano rear mechs that use oversized jockey wheels as standard.

The bottom one stock is 13t as opposed to 11t from the hope/standard 105/ultegra/DA

The stamping on the mech says Rd-rx812. Googling that part number shows examples with 2x 11t jockey wheels and some with 1x 11t and 1x 13t as you suggest. Mine was definitely supplied with 2x 11t from new and works perfectly with the hope replacements.

sram rotors dont work with shimano, too thick and everyone should hard good rotors esp CL, hodl

Nice one I've just picked up some Rival brakes but new wheels only come centre lock. I'll PM you in a week or so then as i i expect your hot line currently going off 🤯

Interesting.
From Shimano website, it seems the 812 has 2x11 jockey wheels, while the 810 has 11/13 jockey wheels. Pretty sure it would work with 2x11 as well.

Update for all those interested in the GRX group.
I've just been working my way through the interest based on a first come first served principle.
Currently I'm waiting to hear back from someone who said they wanted the wheels and the GRX group. He's had over 24 hours to mull it over but I've not heard back so I can only assume his interest has waned given he was initially very responsive. To be fair to him I've given him until 6pm today to come back to me at which point I think it's only fair to work through the other interested parties continuing in date order. Been on my road bike (see link below). In lovely condition. All working perfectly the whole time I used it and when I removed it from the bike. Lots of meat on the original brake pads shows how little I've used it and in good conditions. Not been dragged through the grot like most GRX groups.

1x11 810 shifters with flat mount brakes. Because the bike has external routing I could remove these without having to cut any hoses. Bit of a "gape" on the rubber hoods but I think that's fairly normal for GRX as a mate had the same on his shifters.
810 rear mech. With Hope jockey wheel upgrade - proper bearings, super smooth.
XT 11-40t cassette.
KMC x11SL chain. Consider this a freebie. It was in my spares box until recently so has done more miles than the rest of the group but it was running smooth and quiet on the bike and shifted perfectly and never skipped. I've said consider it a freebie though as I can't be sure of the life left in it and it's a bit odd with 2 quick links.
£500 posted for the lot. £450 if bought with the frameset. Which is a lot less than I've seen ones in much worse condition selling for on ebay. No rotors or cranks/BB, hence "mini group".
Also have some Hope 20Five wheels that I might sell/might keep. A friend has the rear this weekend, but I'll have it back midweek hopefully. Hence front wheel only pictured. They're also in good condition, just a few marks on the non drive side end cap on the rear wheel. I'll picture it when I get it back from my friend.
Looking for £250 posted for these without the tyres or £300 posted including the tyres (schwalbe G-One Speed TLE in 30mm) all set up tubeless with valves and sealant. Word of warning thought, the rear is showing more wear through the middle, where the front looks minty fresh still.
